Our intent by publishing our Cooking With Bison cookbook is
to share with others what we, as producers, have known for years.
Buffalo meat is very low in fat and cholesterol. In fact, bison meat
has the highest percentage of protein of any meat tested. Everyday we
have been delighted with the results of cooking and serving bison to
our families.
The members of the Kansas Buffalo Association urge you to try Cooking With Bison so that you too can enjoy all the health benefits that bison has to offer as well as the excitement of trying something new and different!
