1 medium diced onion<br />
1 can tomatoes (chopped)<br />
2- 15 0z cans Ranch Style or Pinto Beans</p>
<p>Prepare this tasty South-of-the-Border dish before you leave the home for work.</p>
<p>Preheat oven to 225. Rinse roast, salt and pepper to taste, and brown on all sides in covered cast-iron skillet. Brown diced onion. Add all Ingredients, cover and place in 225 oven (or crock pot) for 6 to 8 hours.</p>
<p>Leftovers are great reheated, OR prepare leftovers as filling for burritos.</p>

<p>Place bison strips, flour, salt and pepper in crock pot. Stir well to coat strips. Add remaining (except for beans/peas) ingredients. Cover and cook on low setting for 6 hours. Add beans/peas at about the 5th hour. Serve over rice.</p>

12 Small Red Potatoes<br />

<p>Tinfoil- four 18&#8243; x 18&#8243; squares</p>
<p>Preheat oven to 350°. Add diced onion and 1/4 tsp. black pepper to ground bison. Knead to good mix. Make eight (8) meatballs and brown completely over high heat in fry pan. Place two meatballs, three potatoes, four pieces of carrot and celery, and one quarter of green pepper on tinfoil, season to taste, wrap and seal tightly. Cook by simply placing the foil pouches in the oven at 350° for one (1) hour. Serve pouches on a plate to be opened when you are ready to eat.</p>

<p>Brown ground bison very well (crispy) in large cast-iron skillet. Add onion, green pepper, Mrs. Dash, salt and pepper, cover and simmer for 30 minutes. Add milk flour mixture, Stirring constantly over medium heat bring to HIGH boil until thickened.</p>
<p>Serve over buttered flaky biscuits with eggs to your taste.</p>

1 &#8211; 12 oz. container of beer (Optional)<br />

2 Tbsp. Worcestershire or A-1 Sauce<br />

<p>   1. Wash roast. Pepper all surfaces. Sprinkle with garlic powder.<br />
   2. Brown Bison roast at HIGH temperature on B-B-Q or in frying pan.<br />
   3. Place all ingredients into a crock pot, Dutch Oven or covered casserole.<br />
   4. Add water to level of roast top.<br />
   5. Set crock pot on LOW for SIX to EIGHT HOURS. Or, if using a Dutch Oven/casserole preheat oven to 250° and cook for SIX to EIGHT HOURS.<br />
   6. Use leftover roast for Mexican food (burritos, taco salad, tacos, etc.) the next day.</p>
