South-of-the-Border Buffalo Pot Roast

3 to 5 lbs. bison pot roast
1 medium diced onion
1 can tomatoes (chopped)
2- 15 0z cans Ranch Style or Pinto Beans

Prepare this tasty South-of-the-Border dish before you leave the home for work.

Preheat oven to 225. Rinse roast, salt and pepper to taste, and brown on all sides in covered cast-iron skillet. Brown diced onion. Add all Ingredients, cover and place in 225 oven (or crock pot) for 6 to 8 hours.

Leftovers are great reheated, OR prepare leftovers as filling for burritos.
